Ingredients
  

Vegetables
  • 1 whole English cucumber, peeled and thinly sliced Alternatively, use 2 to 3 Kirby cucumbers.
  • 3 whole garden-fresh tomatoes, cut into wedges
  • 1 whole sweet onion, thinly sliced
Dressing
  • 1 cup white vinegar
  • 2 tablespoons vegetable or olive oil
  • 1/4 cup water
  • 1 tablespoon sugar Adjust according to your taste.
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Method
 

Preparation
  1. In a large bowl, combine the cucumbers, tomatoes, and onions. Toss them gently to mix well.
  2. In a medium bowl, whisk together the white vinegar, vegetable or olive oil, water, sugar, salt, and pepper until well combined.
  3. Pour the dressing over the vegetables in the large bowl. Gently toss the salad until the vegetables are nicely coated with the dressing.
  4. Cover the salad and place it in the refrigerator. Let it sit for at least 1 hour before serving to allow the flavors to meld together.

Notes

Use a slotted spoon to serve the salad to allow excess dressing to drain away. This salad pairs well with grilled meats, baked fish, or as a side to sandwiches. For additional flavor, consider adding fresh herbs or adjusting the dressing ingredients to suit your taste.
