Ingredients
  

Pasta
  • 2 cups Pasta Use elbows, shells, or penne.
Vegetables
  • 1 cup Cauliflower, pureed Rich in vitamin C and K.
  • 1 cup Carrots, pureed Great source of beta-carotene.
Dairy
  • 1 cup Cheddar Cheese, shredded High in calcium and protein.
  • 1 cup Milk Whole milk keeps it creamy.
Flavoring
  • 1 tsp Mustard Powder Adds flavor without added calories.

Method
 

Preparation
  1. Boil water and cook the pasta according to package instructions.
  2. In another pot, steam or roast the cauliflower and carrots until soft.
  3. Blend the cooked vegetables with milk and shredded cheese until smooth.
Combine
  1. Mix the sauce with the cooked pasta until well combined.
  2. Optionally, bake for a few minutes to get a crispy top.

Notes

Feel free to swap out the veggies for what you have on hand. Chopping veggies small helps them blend smoother. Taste and adjust seasoning before serving.
