Ingredients
  

Peach Filling
  • 10 medium Medium Peaches Ripe peaches for best flavor
  • 3 Tbsps Flour (regular or gluten-free)
  • 1 Tsp Ground Cinnamon
  • 1/4 Tsp Sea Salt
  • 1/4 Cup Local Honey (or agave, maple syrup, date syrup) Sweetener of choice
Crumble Topping
  • 2 Cups Whole Oats
  • 1 Cup Flour (regular, gluten-free, or almond flour)
  • 2 Tsps Ground Cinnamon
  • 1/4 Tsp Sea Salt
  • 1/3 Cup Coconut Oil (melted) (or butter) Should be melted
  • 1/4 Cup Local Honey (or agave, maple syrup, date syrup) Sweetener of choice

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Wash and slice the peaches, removing the pits.
  3. In a large bowl, combine the sliced peaches with flour, ground cinnamon, sea salt, and honey (or your choice of sweetener). Toss gently to coat the peaches evenly.
  4. Pour the peach mixture into a greased baking dish, spreading it evenly.
Crumble Topping
  1. In a separate bowl, mix the whole oats, flour, ground cinnamon, and sea salt.
  2. Stir in the melted coconut oil and honey (or sweetener). Mix until everything is combined and crumbly.
  3. Spread the crumble topping evenly over the peach filling in the baking dish.
Baking
  1. Bake in the preheated oven for 30 to 35 minutes, or until the topping turns golden brown and the peaches are bubbly.
  2. When done, remove it from the oven and let it cool for a few minutes before serving.

Notes

Serve warm or at room temperature. Pairs well with dairy-free ice cream or yogurt. Drizzle with honey or serve with fresh mint leaves for added flavor.
