  • 1 cup breadcrumbs Plain or Italian works; use oats for gluten-free.
  • 1 large egg For binding; can substitute with a flaxseed 'egg' if needed.
  • 1/2 cup Parmesan cheese, grated For savory flavor.
  • 1 medium onion, chopped Provides flavor; can be adjusted to preference.
  • 3 cloves garlic, minced Enhances flavor.
  • 2 tablespoons tomato paste Adds tang.
  • 2 tablespoons fresh parsley, chopped Can substitute with dried parsley.
  • 1 teaspoon salt Season to taste.
  • 1/2 teaspoon black pepper Season to taste.
  • 1 teaspoon Italian seasoning For extra flavor.
  • 1/4 teaspoon red pepper flakes Optional for spice.

Method
 

Preparation
  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, onion, garlic, egg, tomato paste, herbs, salt, and pepper.
  3. Mix with your hands until just combined. Avoid overmixing.
  4. Roll the mixture into golf ball-sized meatballs and place them on the prepared baking sheet.
Cooking
  1. Bake meatballs in the preheated oven for about 20 minutes or until cooked through and golden.
  2. Let cool slightly before serving or freezing.

Notes

For best results, don’t skip lining the baking sheet. If you'd like extra-rich flavor, brown the meatballs in a skillet before baking. They can be frozen for up to three months.
