Ingredients
  

Main Ingredients
  • 1 pound zucchini (about 2 medium-sized zucchinis) Shredded and moisture removed.
  • 1 cup corn kernels (canned or frozen)
  • ¼ cup grated parmesan cheese Can substitute with another cheese if desired.
  • ¼ cup grated yellow onion
  • 1 clove garlic (finely minced)
  • 1 tablespoon dried parsley
  • 1 teaspoon salt Adjust to taste.
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • ¼ teaspoon paprika
  • 2 large eggs (lightly beaten)
  • 1 cup almond flour (or all-purpose flour) Adjust based on moisture.
  • 1 teaspoon baking powder
  • to spray cooking oil spray For greasing the air fryer basket.
For Serving

Method
 

Preparation
  1. Preheat the Air Fryer to 360˚F.
  2. Shred the zucchini using the large holes on a box grater.
  3. Transfer the grated zucchini to a kitchen towel, wrap it around the zucchini and squeeze out as much water as possible.
  4. Transfer the zucchini to a large bowl.
  5. Add corn kernels, cheese, onion, garlic, parsley, salt, pepper, basil, oregano, paprika, and beaten eggs to the zucchini; stir to combine.
  6. Add flour and baking powder; stir until everything is well incorporated. If the mixture is too wet, add more flour.
  7. Shape the mixture into 10 to 12 patties.
  8. OPTIONAL: Place the uncooked patties in the freezer for 5 to 8 minutes to keep their shape.
Cooking
  1. Grease the air fryer basket with cooking spray.
  2. Working in batches, place the fritters in the air fryer in a single layer and spray each patty with cooking spray.
  3. Cook for 6 minutes.
  4. Flip over the fritters, spray with cooking spray, and continue to cook for 6 to 8 more minutes, or until browned.
  5. Remove from the air fryer and serve.

Notes

These fritters can be served warm or at room temperature. They are versatile and pair well with various dipping sauces like sour cream, yogurt, and ranch dressing. Leftovers can be stored in an airtight container in the refrigerator for 3 to 4 days, or frozen for up to 2 months.
